Apple Cider Cupcakes

Moist and flavorful recipe for Apple Cider Cupcakes made from scratch
with Brown Sugar Cinnamon Buttercream Frosting makes for a mouthwatering
fall dessert!

INGREDIENTS –

Cupcakes:

2 eggs
1⅔ cup all purpose flour
1 cup apple cider
⅔ cup sugar
½ cup unsalted butter, softened
2 tsp. baking powder
1 tsp. ground cinnamon
½ tsp. salt
1 tsp. vanilla

Frosting:

1 cup softened butter
3 cup powdered sugar
½ cup light brown sugar
1 tsp cinnamon
2 tbsp milk
1 tsp vanilla

INSTRUCTIONS –

Cupcakes:

Cream together butter and sugar in the bowl of a stand mixer (or using a hand mixer). Add the eggs and vanilla and mix until fully incorporated. 

Whisk
together all of the dry ingredients in a separate bowl. Add the apple
cider and the mixture of dry ingredients, alternating between the two,
slowly incorporating them into the butter/sugar/egg mixture.

Line standard muffin/cupcake tin with paper or foil liners.

Fill
cupcake liners ⅔ full and bake at 350º for 17-19 minutes. Bake until
toothpick or skewer inserted into center comes out clean.

Let cool
completely before frosting.

Frosting:

Whip butter, brown sugar, cinnamon and vanilla together with a mixer until light and fluffy.

Gradually add powdered sugar and mix until incorporated.

Add milk until you reach desired consistency (more for thinner frosting).

Transfer to piping bag and frost each cupcake once they have cooled.

Garnish with an apple slice, if desired.

Enjoy!

Homemade Pumpkin Spice Latte

Make the popular coffee house pumpkin latte at home. Canned or homemade pumpkin puree both work well in this recipe.

INGREDIENTS-

2 cups milk (dairy or non-dairy)
2 tablespoons pumpkin puree
1 to 3 tablespoons sugar, depending on how sweet you like it
1 tablespoon vanilla extract
½ teaspoon pumpkin pie spice, plus more for serving
½ cup strong hot coffee
Whipped cream, for serving

INSTRUCTIONS –

Add milk, pumpkin puree, and sugar to a saucepan over medium heat. Heat until hot, but do not boil.

Remove the saucepan from the heat and whisk in the vanilla, pumpkin pie spice, and the coffee.

Divide the mixture between two mugs. Top with whipped cream and a sprinkle of pumpkin pie spice.

NOTES –

Milk: This tastes best with 2% or whole milk, but you can substitute with skim milk. Non-dairy milk like soy, almond, or coconut milk will also work.

Sugar: This recipe calls for 1 to 3 tablespoons of sugar. How much you use is up to you. We tend to prefer less sugar in our drinks. You can also use a sugar substitute. Add this to taste.

Pumpkin Pie Spice Blend: Find pumpkin pie spice at the store or make it at home. You likely have everything you need to make it already. Mix the following spices in a spice jar: 1 ½ tablespoons ground cinnamon + 2 teaspoons ground ginger + ½ teaspoon ground nutmeg + a pinch of ground cloves.

Binge-able Shows for Spooky Season

All these shows but one (as of today, Oct. 13th 2018) are available on Netflix. These are just some of the shows I really enjoy binge watching during the spooky season, which for me is September 1st through November 30th lol.

  • Good Witch : A family friendly show about a small town and the magic that surrounds it. There’s also a ton of movies too but these aren’t currently available on Netflix. The show (and movies) is very wholesome and cute.
  • Goosebumps : Yes, Netflix currently as all the Goosebumps episodes and if you’re a “90′s kid” or just want to live out your 90′s wannabe fantasy then this show is a must in October. If you really want to get an authentic 90′s experiences watch it on a Saturday morning while eating French Toast Crunch. Totally family friendly-ish lol.
  • Are You Afraid of the Dark? : This one isn’t on Netflix but there are some episodes posted on Youtube. This show is much like Goosebumps (but much better in my opinion lol). FYI no matter how old you are the opening is always gonna be hella creepy lol.
  • Scream : Murder mystery + teenage angst. What more could you want from a TV show? This show is much more gory and isn’t suitable for kids.
  • Charmed : Witches again? Yes! Charmed is just a great show to watch anytime but it’s supernatural elements and nostalgic… charm 😉 make it one of my favorite spooky season shows.
  • Supernatural : Again, the theme of supernatural creatures just fit so well with the season. Great “Halloween-ish” episodes include “Monster Movie” and “It’s the great pumpkin, Sam Winchester” Earlier season’s had a more “monster of the week” approach and are some of the best episodes. My personal favorite episode is Season 1 episode 11 “Scarecrow”
  • Creeped Out : This is a new Netflix anthology series, much like Goosebumps and Are You Afraid of the Dark? It’s rated TV-Y7 so probably not a suitable show for super young kids.
  • American Horror Story : Particularly season 1, 3 and 6. This show is an adult horror style show and therefore I do not recommend watching this if you’re sensitive to imaginary of sexual assault, racial violence or graphic gore.

Some other shows that I also think are great binge-able spooky season shows but that I don’t have much to say about.

during the colder months, a cup of hot cocoa can bring wonderful warmth and coziness. you can add a few spices to bring magick into the mug that inspires happiness, healing, and self-love. you will need:

☾ ¼ cup unsweetened cocoa powder (self love and grounding)

☾ ½ cup granulated sugar (granting wishes)

☾ 1/3 cup hot water

☾ ¼ tsp salt

☾ 4 cups milk (dairy or non-dairy)

☾ 1 tsp vanilla extract (love, restoring lost energy)

☾ 1 tsp fresh orange zest (abundance and happiness)

☾ a pinch of ground nutmeg (attracting prosperity)

☾ a pinch of allspice (warmth and healing)

combine the cocoa, sugar, salt, nutmeg and allspice with the water in a pot over medium heat. stir constantly until the mixture boils; continue stirring constantly for 1 more minute.

stir in the milk and continue to heat the mixture, without letting it boil. remove from heat and add vanilla and orange zest. serve immediately.

Want to have one really nice set of plates and silverware for company and Thanksgiving.

Want to be able to buy a new outfit and a good bra at least a couple times a year.

Want to burn incense and candles in my home daily, and have nice soaps.

Want to be able to donate to charity frequently and without worry.

Want to buy hardcover books to read and put on a shelf for my kids to read someday.

Want to have candies in bowls for people who visit.

Want to have a linen closet or at least a linen shelf.

Want to go see live local theater several times a year.

Want to have a kitchen with basic baking supplies so I can bake bread on the weekend, and pies for special occasions.

I just want to be comfy.

What’s funny is that this actually happened.

Finnish soldier gets separated from the rest of his unit but he’s the only one carrying the emergency amphetamines for the unit, takes too many and goes on a one man rampage for like 2 weeks straight giving the opposing Soviet soldiers nightmares for decades. Oh and he did it all on skis. 

Did he survive?

Yes, during his methed up 2-3 week rampage he got injured by a land mine, travelled 400km on skis, and only ate pine buds and a Siberian Jay that he caught which he ate raw. When he made it back to Finnish lines he was taken to a hospital where it was found his heart rate was nearly 200 beats per minute and his weight had dropped to 43kg (94.7lbs).
